Our first Anaerobic Natural is funky and fruity in the best way, thanks to its time in the tank where it ferments without oxygen. The cherries are soaked in water, sealed for 72 hours, and the oxygen is pushed out, allowing an extended fermentation to develop flavours. Carbon dioxide also builds up and pressurises the container, forcing juices and sugars into the bean.

The result is a delicious fruit-forward brew with wine-like, juicy flavours of plum jam and peach, leaving a cocoa nib aftertaste and a creamy body that lingers sweetly even after the cup is empty.

Since its inception in 2001, COOPAC has been a trailblazer in Rwanda's coffee scene. Proudly the first in the region to earn Fairtrade and organic certification, it has expanded with washing stations dedicated to premium green and roasted coffee—even expanding to new methods like anaerobic processing. This special microlot of coffee comes from the Kirorero Washing Station which serves about 2012 smallholder producers in the area of Boneza and Musasa, of whom about 800 are women farmers.
